I got this recipe from a dear friend of mine that passed away 5 years ago today. So to honor Chef Steve, I thought I would share his recipe.
TIRAMISU
Recipe from Thattoddlertown.blogspot.com
6 tablespoons mascarpone cheese
2 pints heavy whipping cream
1 cup white sugar
1 tsp. vanilla
1 jigger white rum
Lady fingers (4 for each indivdual dessert)
Instant expresso
Method - makes 4
Blend cheese, whipping cream, sugar, vanilla and rum to stiff consistency; taste for possible addition of sugar and then refrigerate for 15 minutes.
On a cookie sheet or small baking pan with sides, dip 2 ladyfingers into expresso (DON'T SOAK) and place on pan. Using a pastry funnel with star tip, add filling to this first layer. Dip 2 remaining ladyfingers into expresso (DON'T SOAK) and place on top and add more filling. Use long toothpicks to hold together, wrap with plastic wrap and chill (will keep for roughly 3 days).
When ready to serve, use shavings of semi sweet chocolate and lightly sprinkle with cinnamon.

What a great way to remember your friend. This recipe looks delish!
So nice of you to keep honoring your friend after his passing. I just looked at the date as I was reading this and realized that exactly 18 years ago today was the last day I saw one of my best friends before he passed away about a month later. (You can see a picture if you scroll down to "Surfrider" label on my blog.) I always think of him on the first day of spring. Thanks for sharing the recipe!
