Sour Cream Noodle Bake



This is another recipe from my sweet sister Pippa.  She really is a terrific cook/baker.  She was the smart one that always paid attention to how our grandma made everything.  I was too busy staring at boys and sneaking around.  Oh well.  She wins that round.

Sour Cream Noodle Bake

1 8 oz package medium egg noodles
1 lb ground beef
1 16 oz jar Spaghetti Sauce divided
1 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
1 cup ricotta cheese (recipe originally called for cottage cheese, but I prefer ricotta)
1 cup sour cream
1/2 cup chopped green onions
3/4 cup shredded cheese
Parmesan Cheese

Cook noodles according to directions and drain.  Brown ground beef until no longer pink and drain.  Combine 1/2 tomato sauce and seasonings with cooked ground beef and simmer for 5-10 minutes.  Fold together cooked noodles, ricotta cheese, sour cream and green onions.  Spoon a little of the sauce mixture in bottom of 9 X 13 pan to prevent noodles from sticking.  Place 1/2 noodle mixture in pan and cover with 1/2 meat mixture.  Repeat layers once again.  Sprinkle with cheddar and parmesan cheeses.  Can be refrigerated or frozen at this point. Return to room temperature and bake at 350 for 30-35 minutes until heated through.  Use a knife inserted in the center of the casserole to check for doneness.  Serve with additional sauce.
